Eclipsing

Today, everyone forgot about politics and other problems and took some time out to enjoy what nature had to offer, in the form of the solar eclipse.

We didn’t get eclipse glasses, but my husband did make a pretty cool pinhole camera so we could enjoy the event.

Naturally, I decided my cocktail choice for the evening should be a tribute to this rare event, one that won’t happen again until 2024.  This dark colored drink with the enormous ice cube reminded me of an eclipse in reverse.  I made it with an espresso/rum concoction called Grind, which has a sweet coffee flavor, some bourbon, bitters, and simple syrup.  It was sort of like an old fashioned, but with this tasty coffee addition.

The recipe was courtesy of the back of the Grind bottle, a drink they call the Cowboy Coffee, which makes the choice of bourbon really appropriate!
